While Chef Paolo’s primary focus is on managing the kitchen operations and culinary integrity for the Dolce Italian brand, Chef Paolo also provides strategic culinary guidance and execution for LDV’s international expansion.
Before joining LDV, Paolo served as Executive Chef of both the highly acclaimed Rainbow Room in New York City, followed by the legendary Cipriani Wall Street.
Paolo has also served at the helm of various Michelin-starred restaurants in New York and London, including the infamous Le Cirque in New York.
